Freezer Cooking Day ~ Getting a Late Start

This month I decided to tackle the Freezer Cooking event head-on. I've been doing a fair amount of cooking ahead, double batches, mini cooking days, etc. But I really want to try doing a full months worth of cooking, and then do my best to actually USE IT in a month. I'm so good at getting a stock of meals/components into the freezer, and then saving them for 'when I really need it' until they get a little freezer burned! Not wise, and not conducive to wanting to make a huge deal out of cooking ahead just to save it all indefinitely!

I've been doing my best to plan wisely & carefully so that I can actually pull this off. Yesterday was my day to get my prep list done, and today I was planning to hit it hard and get everything on my list into the freezer.

But plans change. David called a little before lunch yesterday, and wanted to know if I would go along with him to the viewing in Halltown. Edward Kropf was killed in a bad accident, and since David knew his twin, Edwin, David felt like we should go. So we did. We also stopped in to visit an Amish man who was suddenly hospitalized due to internal bleeding. He is in ICU at the moment. Because of that sudden change of plans, I only got about half of my prep work done before we left, but I felt good about getting that much done!

. . . . . . . Interruptions come too. My little blessings are now awake, so it's time to get started with dressing, changing diapers, feeding, changing diapers again, getting the laundry started, etc.

I've got two pots of beans gently simmering on the stove at the moment, and hopefully by the time I'm ready to get busy in the kitchen they will be cooling somewhere else! :)

I'll post my master list later, after it's all (hopefully) done!

And today I will be very thankful for a healthy, happy family. My man is out working (PTL, he has work!) and he's feeling good (not in the hospital, or worse yet, in a casket)!! I have a lot to be thankful for!
