It's getting to be that time of year again. I just love going out to the garden to decide what we're eating for the next meal!
One of our favorite summer meals is Squash Fritters, and I thought I really should share it with you all. If you haven't tried them, PLEASE do, they are just about my favorite individual dish on this earth . . . and I am really not a picky eater at all. I tend to love almost everything, but squash fritters really do come up close to the top of my list!
Here's the recipe, such as it is;
For each adult you are serving;
1-2 small zucchini, grated
1/4 onion, finely chopped
1 egg
1 T. or so of cornmeal
1 T. milk
salt and pepper to taste (seasoning salt is good)
Mix well, and fry in a skillet (with plenty of coconut oil, or butter) until well browned.
Spread mayo on homemade bread, and top with a fritter, cheddar cheese slices, fresh garden tomatoes, and maybe even some thinly sliced cucumbers, sprinkle with salt & pepper and have fun trying to get the whole mess up to your mouth without anything falling off!!
Please Note; this photo is of a wintertime fritter, storebought tomatoes and cukes were spurned, so it looks rather plain! We were desperate for a fritter though, and boughten zucchini work in a pinch.
We eat a lot of squash fritters in the summer time! Add in some fresh corn on the cob, and applesauce of course, and you've got a complete meal! I am of the personal opinion that squash fritters make a hamburger look pretty pathetic, and I'm no vegetarian!
